Harvest starts when the grapes have reached the perfect level of maturity and are ready to be transformed into wine. This usually occurs between the middle of August and the middle of October. The exact time of the picking will depend on the grape variety, the weather conditions and the style of wine that the Estate wishes to produce. Certain grape varieties have a different maturation time. Not only, but within the same grape variety the time of picking can mean the difference between a fruity and fresh wine and a more structured and concentrated wine with a higher alcohol content.
At Masseria Borgo dei Trulli we continually monitor the maturation progress of the grapes on the vines using particular analyses in order to decide the exact time to harvest.
